I was really in the mood to make pancakes today…so I did 🙂 Who cares if it’s still a week and a day until pancake day?! This time I wanted to make a stack of American pancakes and I tried something new by making an apple, cinnamon, and caramel topping…soooo good!
For the pancakes (makes around 11): 100g self raising flour 150ml milk 1 egg 1 tsp vanilla extract For the caramel apple topping (serves 1-2): Half an apple, peeled and diced 1 tsp (5g sugar) 1 tsp (5g margarine) Pinch of cinnamon
For the pancakes: 1. Sift the flour into a large mixing bowl 2. Mix together the milk, egg, and vanilla extract 3. Add the mix to the flour and whisk thoroughly until there are no lumps 4. Heat a frying pan to medium heat 5. Wipe the pan with a piece of kitchen towel dabbed in oil 6. Turn the heat down to fairly low 7. Add 1.5-2 tbsp of batter to the pan (add as many as will fit) 8. Wait until the tops are bubbling and the sides of the pancakes look set 9. Use a spatula to flip over 10. Wait for about 30 seconds - 1 minute until the other side is brown 11. Place on a plate in the microwave to keep warm 12. Repeat until all the batter is used For the apple, cinnamon, and caramel topping: 1. Put all the ingredients into a saucepan and mix over a low heat 2. Add a couple of teaspoons of water 3. Take off the heat after a few minutes 4. Serve on top of pancakes, drizzle with golden syrup, and dust with icing sugar!
