I thought I’d bake something today as I haven’t baked anything for aaaaages so decided to do a chocolate cake 🙂 I made a devil’s food cake, but since there are so many versions online, I kind of mushed them up into one and it turned out pretty nice.
For the cake: 85g margarine 200g sugar 2 eggs 50g cocoa 220ml hot water 170g self raising flour 1 tsp vanilla extract For the ganache icing: 50g milk chocolate 25ml single cream For the buttercream icing: 56g icing sugar 21g margarine 10g cocoa
For the ganache icing 1. Heat the chocolate and cream in a pan until all melted and smooth 2. Leave to cool to room temperature, then put in the fridge for about 10 mins 3. Whisk the mix until it becomes lighter in colour and slightly thicker For the buttercream icing 1. Mix together the margarine, icing sugar and cocoa 2. Whisk quickly to make it slightly fluffier For the cake: 1. Preheat the oven to 180°C and grease and line two 20cm baking tins 2. Add the hot water to the cocoa, mix well and leave to cool 3. Cream together the margarine and sugar 4. Add the egg and vanilla and mix together 5. Add the cocoa mix and mix well 6. Sift in the flour and fold it in 7. Divide evenly between the two tins 8. Bake for about 25 minutes, or until a toothpick comes out clean from the cake 9. Leave to cool completely 10. Spread the chocolate ganache on one cake, and the buttercream on the other
